Do you find it difficult to “cook” for one? Me too! That’s why I LOVE leftovers. Many times when my husband is not going to be home for dinner, I will have a very nice meal without “cooking” a thing. Here’s how – when you do cook, plan ahead to make extra. Grill extra chicken or steaks, make extra taco meat or spaghetti sauce or a double portion of chili. Tonight, I am having Ancho grilled pork ribeye steak, sauteed mushrooms, twice baked potatoes and a nice salad. All leftover from Sunday dinner. And for those of you who think you don’t like leftovers – I have the secret to changing your mind. Re-heat in the oven rather than the microwave and your leftovers will taste as good as freshly cooked – or sometimes even better! Try it – I know you will like it!
